Carne de avestruz: una sana opción para el consumo humano

Abstract

The ostrich breeding can represent a beneficial alternative, from several points of view and economically provide products to man. In recent years, consumer tastes and trends have been changing significantly towards healthier foods, with lower fat content, especially meat products. This makes it necessary to adapt this activity to the new realities in the habits of the consumer and to anticipate the future demands of foods with greater nutritional value (Neri, 1997). To contribute to the solution of this problem, the ostrich breeding has been conceived as an alternative livestock option, which has been accepted by Mexican producers. This species is characterized for being prolific, for its high yield and great adaptability, in arid and semi-arid regions, allowing the obtaining of high quality meat, rich in proteins, but with low cholesterol content, in addition to other products of commercial interest, like the skin and the feather. These products are obtained at a low cost; it does not require specialized diets, the simplicity of the facilities used and because the technical assistance is minimal. Giving to know this species of which it lacks much to investigate, to discover and that represents an alternative of cattle production; that allows improving the social, economic and productive conditions of the producer and the consumer (De la Maza, 1996).

La cría del avestruz puede representar una alternativa beneficiosa, desde varios puntos de vista y suministrar económicamente productos al hombre. En los últimos años los gustos y tendencias del consumidor se han estado modificando significativamente hacia alimentos más saludables, con menor contenido de grasas, en especial los productos cárnicos. Esto hace necesario adecuar dicha actividad a las nuevas realidades en los hábitos del consumidor y se anticipe a las demandas futuras de alimentos con mayor valor nutritivo (Neri, 1997). Para contribuir a la solución de este problema, se ha concebido a la cría del avestruz como una opción pecuaria alternativa, que ha tenido aceptación por los productores mexicanos. Esta especie se caracteriza por ser prolifera, por su alto rendimiento y gran adaptabilidad, en regiones áridas y semiáridas, permitiendo la obtención de carne de alta calidad, rica en proteínas, pero con bajo contenido de colesterol, además de otros productos de interés comercial, como la piel y la pluma. Estos productos son obtenidos a un bajo costo; no se requiere dietas especializadas, la sencillez de las instalaciones empleadas y porque la asistencia técnica es mínima. Dando a conocer esta especie de la cual falta mucho por investigar, descubrir y que representa una alternativa de producción pecuaria; que permita mejorar las condiciones sociales, económicas y productivas del productor y el consumidor (De la Maza, 1996).
