El cultivo del café en el sur de Chiapas. 1847-1910

Abstract

COFFEE is an aromatic product, with a pleasant flavor and consumable anywhere in the world; however, few of us know its origin, especially the coffee that exists today in Mexico; that is, since it was accepted as a stimulating drink during the fifteenth century, the journey through the islands of the Caribbean until the arrival in New Spain and its development in different states, such as Veracruz, Michoacán, Oaxaca and Chiapas. That is why in the present work we express our concern to write about the history of agriculture in Mexico, particularly that of the state of Chiapas in the field of coffee growing, since this product is currently going through a price crisis, due to the lack of a national and international market and as a consequence, many of those who are dedicated to this crop are choosing to give up this work and look for new alternatives in small businesses. And probably this crop will become extinct and it will be taken as a product for self-consumption, as has happened in other places in the Republic. This is why in our topic "The Cultivation of Coffee in the South of Chiapas. 1847 – 1910”, we tried to expose the important role that the coffee industry has played in the development of some elementary factors that the state had been suffering for decades and in this way we will be leaving a mark on the coffee cultivation of this entity. We were interested in studying this branch of agriculture because decades prior to the coffee boom the entity was in close isolation from the rest of the nation, in other words, it suffered from many deficiencies in different areas.

El CAFÉ es un producto aromático, de sabor agradable y consumible en cualquier parte del mundo; sin embargo pocos conocemos su origen, sobre todo el café que hoy existe en México; es decir, desde que se aceptó como bebida estimulante durante el siglo XV, el recorrido por las islas de El Caribe hasta la llegada a La Nueva España y su desarrollo en diferentes estados, como Veracruz, Michoacán Oaxaca y Chiapas. Es por ello que en el presente trabajo plasmamos nuestra inquietud por escribir sobre la historia de la agricultura en México, en particular al del estado de Chiapas en el ramo de la cafeticultura, ya que este producto actualmente está pasando por una crisis de precio, por la falta de un mercado nacional e internacional y a consecuencia, muchos de los que se dedican a este cultivo están optando por renunciar a esta labor y buscar nuevas alternativas en el comercio pequeño. Y probablemente este cultivo se extinga y se tome como un producto de autoconsumo, como ha sucedido en otros lugares de La República Es por esto que en nuestro tema “El Cultivo del Café en el Sur de Chiapas. 1847 – 1910”, intentamos exponer el importante papel que ha jugado la industria cafetalera en el desarrollo de algunos factores elementales que había venido sufriendo el estado durante décadas y de esa manera estaremos dejando una huella sobre el cultivo del café de esta entidad. Esta rama de la agricultura nos interesó estudiar debido a que décadas anteriores al boom cafetalero la entidad se encontraba en estrecho aislamiento del resto de la nación, dicho en otras palabras, sufría de muchas carencias en diferentes ámbitos.
