Análisis de rentabilidad de un plan de negocio de una pastelería con enfoque artesanal “La Casa del Pastel” ubicada en la ciudad de Morelia, Michoacán

Abstract

Thanks to the development of this investment Project. The different stages that were carried out to determine if this business plan is profitable or not are shown. In the first chapter the fundamentals of the investigation, the main alternatives in which the business plan is developed are analyzed, the general and specific objectives to be achieved are described. The second chapter deals with the theoretical framework that allows to base the investigation, having as input the diverse knowledge about this project. The third chapter talks about the market study. Define the target market to which the project is directed. FODA analysis was performed. A study tool of the project situation to analyze its internal characteristics and its external situation. The technical study refers to all the elements that are required to be able to prepare the cakes and dessert table services for events. The production center, location is described; as well as the equipment and material. The profile of the pastry staff positions is described. In the financial and economic study, a classifications and calculations of costs and expenses are made. The costs include the remodeling of the premises, salaries, depreciation of the machinery and equipment that is required. On the other hand, the project of annual sales for the period 2022-2026 is estimated with the objective of knowing the net profit and the break-even point per year of the project with an investment of, at the end of the five ears a profit of $200,460.3 a Net Present Value (NPV). According to the PAYBACK, the investment is recovered in two and a half years.

Gracias al desarrollo de este proyecto de inversión se muestran las diferentes etapas que se realizaron para determinar si este plan de negocio es rentable o no. En el Primer capítulo se abordan los fundamentos de la investigación, se analizan las principales alternativas en las que el plan de negocio se desarrolla, se describen los objetivos generales y específicos que se pretenden alcanzar. El segundo capítulo aborda el marco teórico que permite fundamentar la investigación, teniendo como insumo los diversos conocimientos sobre este proyecto. El tercer capítulo habla sobre el estudio de mercado. Define el mercado meta al que se dirige el proyecto. Se realizó análisis FODA. Una herramienta de estudio de la situación del proyecto para analizar sus características internas y su situación externa. El estudio técnico, se refiere a todos los elementos que se requieren para poder para poder elaborar los pasteles y servicio de mesa de postres para eventos. Se describe el centro de producción, localización; así como el equipo y material. Se describe el perfil de los puestos del personal de la pastelería. En el estudio financiero y económico se hace una clasificación y cálculos de los costos y gastos. Los costos incluyen la remodelación del local, los salarios, depreciaciones de la maquinaria y equipo que se requiere. Por otro lado, se estima la proyección de las ventas anuales por el periodo de 2022-2026 con el objetivo de saber la utilidad neta y el punto de equilibrio por año del proyecto con una inversión de, al término de los cinco años se obtiene una ganancia de $200,460.3 a Valor Presente Neto (VPN). Según el PAYBACK la inversión se recupera en dos años y medio.
