dc.description.abstract | This paper is clear and detailed aspects about tequila as culture, process development, origins, history and sensory evaluation. The sequence of sensory evaluation (tasted) and reference also addresses the necessary tests done for it to take place. Now that in Mexico there have been cases of adulterated tequila, which causes damage to health, it is very convenient and useful to this thesis that aims primarily to gathering information about the "Determination of congeners in tequila gas chromatography ", since this technique allows to protect the tequila piracy, thereby benefiting the tequila industry and society at large to save to consume a pirate drink (adulterated). One process of tequila production is fermentation, and is the most important in the production step, since it is at this stage where the flavors and aromas (congeners) of tequila are generated, then separated to achieve a combination over 400 different elements that give different features in each production of tequila. Tequila congeners are the compounds that make up the product. Using a new technique developed by scientists of the Centre for Research and Advanced Studies (CINVESTAV) in Irapuato can be identified and thus verify the authenticity of tequila, in addition to combating piracy. The new technique involves making a gas chromatography using an olfactometer, an instrument that has built 10,000 sensors able to identify the smell and aroma of the drink, and this way you can determine if it was made with Agave Weber blue variety Tequilana. | en |
dc.description.abstract | En este trabajo se muestran de forma clara y detallada aspectos acerca del tequila como su cultura, proceso de elaboración, orígenes, historia y evaluación sensorial. También se aborda la secuencia de una evaluación sensorial (catado) y se hace referencia a las pruebas necesarias para que ésta se lleve a cabo. Ahora que en México se han dado casos de tequila adulterado, el cual causa daños a la salud, resulta muy conveniente y de gran utilidad la presente tesina que tiene por objetivo primordial la recopilación de información acerca de la “Determinación de congéneres en el tequila por cromatografía de gases”, ya que está técnica permite proteger al tequila de la piratería, beneficiando con ello a la industria tequilera y a la sociedad en general al salvarlos de consumir una bebida pirata (adulterada). Uno de los procesos de la elaboración del tequila es la fermentación, y es el paso más importante en la producción, ya que es en esta etapa en donde los sabores y aromas (congéneres) del tequila se generan, después se separan para lograr una combinación de más de 400 diferentes elementos que le dan características diferentes en cada planta de producción de tequila. Los congéneres del tequila son los compuestos que componen el producto. Mediante una nueva técnica desarrollada por Científicos del Centro de Investigaciones y Estudios Avanzados (Cinvestav) de Irapuato se pueden identificar y así comprobar la autenticidad del tequila, además de combatir la piratería. La nueva técnica consiste en realizar una cromatografía de gases mediante un olfatómetro, instrumento que tiene integrados 10 mil sensores capaces de identificar el olor y aroma de la bebida, y de esta manera se puede determinar si fue elaborado con Agave Tequilana Weber Variedad Azul. | es_MX |
