Vinata mezcalera La Línea de Fuego

Abstract

This work presents the architectural project of a vinata mezcalera in San Francisco Etúcuaro which is named La Línea de Fuego, named by the master mezcalero Alonso Rangel, producer and owner of the property. There will be developed the process of production of the mezcal, tastings of the product will be offered and demonstrations of its elaboration process. The lack of adequate infrastructure within the vineyards has meant that there are very few mezcaleros in the population who have a certified product. The main objective of this project is to design the facilities of a mezcal factory that has two things, technical and according to the topography of the land, optimize the production of the product according to the different stages of production, to optimize the production process from the attainment of the plant, to the distillation, bottling and subsequent storage of the final product. The design of this vinata can be replicated for bachelorDegreeWork producers in the region, with the support of the economic resource of federal and state funds, through the SAGARPA, in order to strengthen the prestige and value of this region’s ancestral drink, serving as a model to be followed by bachelorDegreeWork Municipalities and States.

Este trabajo presenta el proyecto arquitectónico de una vinata de producción mezcalera en San Francisco Etúcuaro la cual lleva como nombre La Línea de Fuego, denominada así por el maestro mezcalero Alonso Rangel productor y dueño del predio. Ahí se desarrollará el proceso de producción del mezcal, se ofrecerán catas del producto y se llevaran a cabo demostraciones de su proceso de elaboración. La falta de infraestructura adecuada dentro de las vinatas ha hecho que en la población haya muy pocos mezcaleros que cuenten con un producto certificado, este proyecto tiene como principal objetivo el diseño de las instalaciones de una fábrica de mezcal que cuente con las características tanto técnicas como sanitarias que permitan, de acuerdo a la topografía del terreno, optimizar la elaboración del producto de acuerdo a las diferentes etapas de producción, de tal manera que se optimice el proceso productivo desde la obtención de la planta, hasta la destilación, embotellamiento y posterior almacenamiento del producto final. El diseño esta vinata podrá ser replicado para otros productores de la región, con el apoyo del recurso económico de fondos federales y estatales, por medio de la SAGARPA, para de esta manera fortalecer el prestigio y valor de esta bebida ancestral de la región, sirviendo como modelo a seguir por otros Municipios y Estados.
