Reubicación del rastro municipal en Maravatío, Michoacán

Abstract

Traces or also known as slaughter plants, are closed facilities to prevent contamination of meat products, this establishment must meet the technical and sanitary conditions for the slaughter of animals, as well as for the processing, conservation and distribution of meats and their derivatives. They operate under the supervision of a veterinarian approved by the Ministry of Agriculture and Hydraulic Resources (SARH), with the objective of guaranteeing the quality of meat for its consumers. At the moment in the city of Maravatío, Michoacán, the trail has not been operating under the requirements of the norms that govern this type of establishments, so that sanctions have been imposed. Some of the most obvious rules that have evaded are: the location and physical conditions of the establishment. It is worth mentioning that the city trail is only bovine, creating the need for a pig trail, since the meat consumed from these animals comes from clandestine slaughterhouses, so the quality of it is not guaranteed, which puts the health of its consumers at risk. The present work tries to solve the aforementioned problem, with a project that complies with the regulations and norms that govern the design of the establishment and including a space in which the pig slaughter can be carried out, in order to guarantee the quality of the meat consumed from this animal and thus avoid the generation of gastrointestinal diseases.

Los rastros o también conocidos como plantas de sacrificios, son instalaciones cerradas para evitar la contaminación de los productos cárnicos, este establecimiento debe reunir las condiciones técnicas y sanitarias para el sacrificio de animales, así como para el procesamiento, conservación y distribución de carnes y sus derivados. Operan bajo la supervisión de un médico veterinario aprobado por la Secretaria de Agricultura y Recursos Hidráulicos (SARH), con el objetivo de garantizar la calidad de la carne para sus consumidores. Actualmente en la ciudad de Maravatío, Michoacán, el rastro no ha estado operando bajo las exigencias de las normas que rigen este tipo de establecimientos, de manera que se le han impuesto sanciones. Algunas de las normas más evidentes que han evadido son: la ubicación y las condiciones físicas del establecimiento. Cabe mencionar que el rastro de la ciudad solamente es bovino, creando la necesidad de contar con un rastro porcino, ya que la carne que se consume de estos animales proviene de mataderos clandestinos, por lo que la calidad de la misma no está garantizada, lo que pone en riesgo la salud de sus consumidores. En el presente trabajo se trata de dar solución a la problemática anteriormente mencionada, con un proyecto que cumpla con las el reglamento y normas que rigen el diseño del establecimiento e incluyendo un espacio en el que se pueda llevar a cabo el sacrificio porcino, para así garantizar la calidad de la carne consumida proveniente de este animal y así evitar que se generen enfermedades gastrointestinales.
