Abstract

The following work presents the architectural project of a distillery focused on the production of mezcal in the community of San Francisco Etúcuaro, a distillery which is promoted by the mezcal brand "El viejo Alegre" by the mezcalero C. Crecenciano Ayala Téllez and owner of the property. The project is mainly intended for the production of mezcal and the aging of the drink, in addition to adding areas for the consumption and commercialization of mezcal and brand administration, inferring in a space where the means of production can be appreciated and Take the different factors around it Currently, the production and popularity of mezcal is on the rise at a national and international level, which has caused a greater national investment in the infrastructure focused on the production of mezcal, in the case of the community of Etúcuaro. , we find ourselves in a certainly different situation, being a community of importance for the subject due to its traditionality and mezcal culture. There is a significant number of uncertified distilleries that do not have the correct technical and sanitary measures, preventing further formalization of this agro-industry at the state and national level. The objective of this project, when established for a private promoter, is to propose a space that meets the necessary requirements to comply with the certification regulations and at the same time establish an ideology focused on the optimization of natural and human resources that participate in it. all the processes for the elaboration of mezcal, as well as proposing an energization as such of the building based on the use of clean energy. As such, the main objective of this project is in question of the brand, the aspects raised can be established as a benchmark in establishments of this type.

El siguiente trabajo presenta el proyecto arquitectónico de una destilería enfocada a la producción de mezcal en la comunidad de San Francisco Etúcuaro, destilería la cual es promovida por la marca mezcalera "El viejo Alegre” cargo del mezcalero C. Crecenciano Ayala Téllez y dueño del predio. El proyecto se destina principalmente a la producción de mezcal y al añejamiento de la bebida. Además, de agregar áreas para el consumo y la comercialización de mezcal y administración de la marca, infiriendo en un espacio donde se pueda apreciar el medio de producción y llevar los diferentes factores entorno a este. Actualmente la producción y popularidad del mezcal se encuentra al alza a nivel nacional e internacional lo cual ha provocado una mayor inversión nacional en la infraestructura enfocada a la producción del mezcal, en el caso de la comunidad de Etúcuaro, nos encontramos una situación ciertamente distinta, siendo una comunidad de importancia para el tema debido a su tradicionalidad y cultura mezcalera. se tiene un número significativo de destilerías sin certificación que no cuentan con las correctas medidas tanto técnicas como sanitarias, impidiendo formalizar aún más esta agroindustria a nivel estatal y nacional. El objetivo de este proyecto al establecerse para un promotor de carácter privado, es plantear un espacio que cumpla con los requerimientos necesarios para cumplir con las normatividades de certificación y a la par establezca una ideología enfocada a la optimización de los recursos naturales y humanos que participan en todos los procesos para la elaboración del mezcal, al igual que plantear una energización como tal del edificio fundada en la utilización de las energías limpias. Como tal el objetivo principal de este proyecto está en cuestión de la marca, los aspectos planteados puedan establecerse como un referente en los establecimientos de este tipo.
