Evaluación normativa del proceso de sacrificio de animales de abasto en el rastro municipal de Pátzcuaro, Michoacán

Abstract

This investigation consists of 5 chapters that indicate the operation and regulatory compliance of the Pátzcuaro trail, these chapters begin with Chapter I divided into two parts where the state of Michoacán is described on the one hand and on the other the municipality of Pátzcuaro where it has been After carrying out the present investigation, Chapter II is the Normative Framework in which the regulations governing establishments destined to slaughter animals for slaughter are described, where some specific points have been obtained for carrying out this investigation. Chapter III is the Theoretical Framework where the importance of traces is described, as well as the types and people who come to participate in the slaughter process. Chapter IV describes the process in which the following investigation with materials and methods has been carried out. Finally, chapter V clearly expresses the results obtained from the present investigation. The methodology that was carried out in the research is of a qualitative nature with an instrument (questionnaire) as a research technique, consulting different responsible persons within the slaughter establishment. Within the investigation, specific parts of the Official Mexican Standards were used: NOM- 008-ZOO-1999; NOM-009-ZOO-1994 AND NOM-033-SAG / ZOO-2014, making a form of these in order to obtain specific results that will help us to visualize compliance or no regulatory compliance. It has been concluded that the establishment dedicated to the slaughter of animals for supply has a favorable impact on the quality of the meat since the percentage of the results obtained is 55% higher than the selected points, however, there are also negative points that can improve themselves and thus provide better service and obtain better quality products.

Esta investigación consta de 5 capítulos que señalan el funcionamiento y cumplimiento normativo del rastro de Pátzcuaro, estos capítulos comienzan con el Capítulo I dividido en dos partes donde se describe el estado de Michoacán por una parte y por la otra el municipio de Pátzcuaro donde se ha llevado a cabo la presente investigación, el Capítulo II es el Marco Normativo en el cual se describen las normas que rigen a los establecimientos destinados al sacrificio de animales de abasto donde se han obtenido algunos puntos específicos para la realización de esta investigación. El Capítulo III es el Marco Teórico donde se describe la importancia de los rastros, así como los tipos y personas que llegan a participar en el proceso de sacrificio. El Capítulo IV describe el proceso en el que se ha realizado la siguiente investigación con materiales y métodos. Por último, el capítulo V expresa de forma claro los resultados obtenidos a partir de la presente investigación. La metodología que se llevó a cabo en la investigación es de carácter cualitativa con un instrumento (cuestionario) como técnica de investigación, consultando a diferentes personas responsables dentro del establecimiento de sacrificio. Dentro de la investigación se utilizaron partes específicas de las Normas Oficiales Mexicanas: NOM-008-ZOO-1999; NOM-009-ZOO-1994 Y NOM-033-SAG/ZOO- 2014, realizando un formulario de estas mismas para poder obtener resultados específicos que nos ayudaran a visualizar el cumplimiento o no normativo. Se ha concluido que el establecimiento dedicado al sacrificio de animales para abasto tiene un impacto favorable para la calidad de la carne ya que el porcentaje de los resultados obtenidos es del 55% mayor a los puntos seleccionados, sin embargo, también existen puntos negativos que pueden mejorarse y así prestar un mejor servicio y obtener productos de mejor calidad.
