The Total Antioxidant Activity, called TAOC for its acronym in English (Total Antioxidant Capacity) is a spectrophotometric test that allows us to observe the non-enzymatic antioxidant activity through the reduction of phosphomolybdenum, at different concentrations (0.24, 1.0, 5.0 and 10 mg/ mL), a known volume of the compound to be evaluated is added to each of them; the standard used for this technique is ascorbic acid, therefore the TAOC is expressed as ascorbic acid equivalents. In this way, a battery of tests can be carried out with different free radicals, for example, tests can be carried out taking the superoxide anion, hydroxyl anion and 2,2-diphenyl-1-picrylhydrazyl (DPPH), Figure 10. For each one of them studies are carried out at different concentrations and a constant volume of the compound to be evaluated. Each of these free radicals provides specific and tangible information on the response that the antioxidant presents against them, since the concentration of reduced free radical is quantified colorimetrically or spectroscopically. |

La Actividad Antioxidante Total, denominada TAOC por sus siglas en inglés (Total Antioxidant Capacity) es una prueba espectrofotométrica que nos permiteobservar la actividad antioxidante no enzimática a través de la reducción de fosfomolibdeno, a diferentes concentraciones (0.24, 1.0, 5.0 y 10 mg/mL), a cada una de ellas se le agrega un volumen conocido del compuesto que se desea evaluar; el estándar utilizado para esta técnica es ácido ascórbico, por lo tanto la TAOC se expresa como equivalentes de ácido ascórbico. De tal modo, se puede hacer una batería de pruebas con diferentes radicales libres, por ejemplo, se pueden realizar ensayos tomando el anión superóxido, anión hidroxilo y el 2,2-difenil-1-picrilhidrazilo (DPPH), Figura 10. Para cada uno de ellos se realizan estudios a diferentes concentraciones y un volumen constante del compuesto a evaluar. Cada uno de estos radicales libres aporta información específica y tangible sobre la respuesta que presenta el antioxidante frente a ellos, ya que se va cuantificando colorimétrica o espectroscópicamente la concentración de radical libre reducido. |
