According to estimates by the National Chamber of the Restaurant Industry and Seasoned Foods (CANIRAC), this sector will participate this year with over 23% of GDP in the tourism industry. The agency estimated that average daily sales of 421 000 industry reach 900 million pesos. Of this amount, 77.5% are food, alcoholic beverages 13.5% and 9% to non-alcoholic drinks, which the country has generated restaurants 243 000 830 000 direct jobs and 2.2 million indirect jobs. CANIRAC divides establishments in the industry: fast food, taco, inns and formal meals. El organismo estima que las ventas diarias promedio de la industria lleguen a 421 mil 900 millones de pesos. De este monto, 77.5% corresponde a alimentos, 13.5% a bebidas alcohólicas y 9% a bebidas no alcohólicas, que en el país existen 243 mil restaurantes que generan 830 mil empleos directos y más de 2.2 millones indirectos. La CANIRAC divide a los establecimientos de la industria en: comida rápida, taquerías, fondas y comidas formales. En tanto, el Instituto Nacional de Estadística, Geografía e Informática (INEGI) los divide de la siguiente manera: por servicio de meseros, comida para llevar, comedores industriales y banquetes. Otros lo hacen por el tiempo del servicio (fast food y slow food), por el origen de los platillos o por sus características empresariales. Los negocios de alta cocina o cadenas de restaurantes representan 4% del total de los establecimientos. Como en otros sectores, las pequeñas y medianas empresas (Pymes) forman 96% de los negocios establecidos. Al abrir un restaurante el empresario debe elegir entre distintos tipos de cocina.
